Chocolate orange chia pudding. Delicious breakfast or dessert.

 


It feels great when you go downstairs for breakfast and delicious treat waiting for you. You can prepare the chia pudding the day before and put it in the fridge - the seeds will absorb milk the pudding will be thicker. It is a good option if we have little time in the morning

Ingredients:

  • 1/4 cup of chia seeds
  • 3/4 cup of milk (cow's or plant based)
  • heaped teaspoon of cocoa powder
  • spoon of honey
  • orange
  • dark chocolate (85% cocoa)

Method:

Put chia seeds into a bowl and mix it with milk. Add liquid honey and cocoa powder. Mix thoroughly. Stand for a few minutes and stir again. Wait until seeds absorb milk and pudding become thicker. Pour into the glass in which you will serve. Set aside in the fridge for at least 2 hours. Serve with orange slices and chopped dark chocolate.

Buckwheat pancakes, delicious gluten free breakfast

I love breakfasts, especially sweet ones with lots of fruit. Recently I have found that my breakfasts have become monotonous and you probably know the diet should be as varied as possible. That's why I decided to make pancakes, mainly because of the children. They are small, easy to hold and can be served with your favourite fruit. It was a success. It was a bit to much for the three of us, so we took the rest on the picnic the next day.

Ingredients for about 16 pancakes:

  • a cup of buckwheat flour
  • a cup of milk
  • 2 eggs
  • banana
  • spoon of honey
  • a teaspoon of cinnamon
  • pinch of salt
  • a teaspoon of baking powder
  • as sides: natural yogurt and fruit

Method:

Buckwheat flour - you can buy it in organic shops. In a bowl or a pan mix all dry ingredients. Mash the banana with a fork and put it in a bowl. Add the remaining ingredients and mix thoroughly. Fry in a pan over medium heat on both sides. It is up to you if you use oil or not (for frying). Serve with yogurt and any fruit you like.

Rhubarb chia pudding - for dessert or for breakfast


It is almost the end of spring and the beginning of summer. It's getting warmer. In hot weather, we often choose lighter options for meals. I recommend chia puddings with all my heart. At first time when I heard about chia pudding it seemed to me quite difficult to prepare and too extravagant. Now I think that they are the most simple breakfast ever. 

Ingredients for 2 servings:

  • 1/4 cup chia seeds
  • a glass of milk
  • teaspoon of honey or stevia / xylitol + spoon of honey to rhubarb
  • 400g of rhubarb
  • a teaspoon of cinnamon
  • a teaspoon of butter

Method:
Mix chia seeds with a teaspoon of honey and milk. Stir every 3 minutes so that the seeds do not stick together. Cut rhubarb it into smaller pieces. Heat the butter in a pot and then add the rhubarb. Cook on low heat until it starts to sap the juices and rise up mush. Add cinnamon and honey. When the rhubarb is ready pour the chia seeds mixed with milk into glasses and leave best for the night. Place the rhubarb on the top in the morning if you want your dessert to be layered

Parmesan carrot chips with a soft-boiled egg. Delicious breakfast idea.


Not everyone likes runny eggs. I love to dunk pieces of bread or vegetables in liquid yolk. Therefore, why not dip the cheese fries from the carrot?

Ingredients:
  • 2 large carrots
  • 20g grated parmesan cheese
  • 2 eggs
  • ground pepper

Method:


Peel the carrot and cut it into chips. Lightly boil (5 minutes) Place on baking paper and sprinkle with grated Parmesan cheese and sprinkle with ground pepper. Bake until the cheese is brown (about 20 minutes)

Cook the eggs. (3 minutes from boiling, cool in cold water otherwise the yolk will be hard boiled)

Smoothie bowl with frozen banana, mango and pineapple. A fruit feast for the eyes + additional burning of calories.


This frozen smoothie is sensational. A real feast not only for the eyes but also for the taste. Creamy, melts in your mouth. It contain a lot of vitamins, made only from fruit. The temperature of the ice cream makes the body have to warm up. Homeostasis is something that our body needs to maintain, that is, a constant body temperature. When we deliver cold products, the body has to spend a certain amount of calories to warm it up. This is not a huge amount, but we are gaining something. It can be an ideal snack for people on a slimming diet.

Ingredients:
  • banana
  • half of mango
  • 1/5 of pineapple
  • for decorations (kiwi, mango, pineapple)


Method:

Cut the fruit into smaller pieces and put in the freezer for about 1.5 hours. Then mix all the ingredients. Serve with kiwi, pieces of mango and pineapple.

Chia pudding with pumpkin mousse - a breakfast that will boost your immune system.


What boost our immune system? There is a lot of ingredients. It can be for example, probiotics (yogurt), spices (ginger) or honey. In addition, pumpkin contains vitamin C, which helps us to fight the common cold faster. Remember that vitamin C will not improve our immune system. However, it will help you in a quicker recovery. Ingredients:

  • 1/4 cup chia seed
  • 3/4 cup milk
  • 4 tablespoons pumpkin pure
  • half a teaspoon of cinnamon
  • Half a teaspoon of nutmeg
  • Half a teaspoon of turmeric
  • Half a teaspoon of ginger
  • heaping teaspoon honey
  • heaping tablespoon of natural yoghurt
  • spoon of chopped walnuts

Method:

Mix the seeds together with spices and milk. Add honey and stir it every 5 minutes for 20 minutes. This is important because otherwise the seed will stick together. At the end mix with pumpkin mousse. Put it in the refrigerator over night. Serve with natural yogurt and chopped walnuts

Low carbohydrate breakfast. Fast, thin one egg omelette.


Lately this is my favourite breakfast. Frying such a thin omelette is very quick. It is prepared literally in a minute. If the pan is well warmed up, the eggs are cut off almost immediately. With a little butter taste perfectly. Served with vegetables such as radishes, peppers, cucumbers, tomatoes or avocados can be low-carbohydrate and rich in protein meal.

Ingredients:
2 eggs
a teaspoon of butter
salt, pepper

Method:
In a bowl, lightly beat the egg with salt, pepper using fork. Pour on a hot pan with melted butter. Fry until the eggs are cut. Then fry another egg (you do not have to use extra butter because the pan will still have some fat after the previous omelette

Banana - walnut chia pudding - a rich source of fiber


Another recipe of chia pudding. I do not know how about you but I love these little grains. I always thought I had to cook them. What was my surprise when I found out you just need to mix them with milk. Just remember to add right amount of liquid. 

Ingredients for 2 servings:
  • 1/5 cup chia seed
  • 4/5 cup of milk
  • banana
  • Flat spoon of peanut butter
  • Half a teaspoon of turmeric


A method of preparing:
Mash banana with a fork and mix with turmeric and peanut butter. Add seeds and pour the milk. Let stand for a while then mix again. Repeat it few times and put it to refrigerator overnight.

Chocolate millet flakes porridge, idea for breakfast.


Millet flakes can be used to cook delicious porridge. It works very well with food intolerances like celiac disease. Contains a lot of B vitamins and micronutrients, especially manganese. I encourage you to try a variety of groats and cereals to make a difference in your morning porridge and your diet.

Ingredients for 2 servings:

  • 8 tablespoons of millet flakes
  • 500ml of milk
  • 20g of dark chocolate over 75% cocoa
  • 80g of prunes
  • Stevia or honey to taste
  • cinnamon

Method:

Cook millet flakes with milk and cinnamon together. Let stand for a few minutes then mix with honey, chocolate and chopped dried plums.

Coconut amaranth with kiwi fruit, alternative porridge


Amaranth can be a good alternative to traditional porridge and used as a cereal for breakfast. It is rich in vitamins and minerals and contains high quality nutritional proteins, thanks to excellent amino acid balance. The phytochemical composition of seeds are rich in antioxidant and can improve our health by reducing the risk associated with oxidative stress diseases such as cancer, cardiovascular disease, diabetes or obesity.

Ingredients per serving:


  • A glass of expanded amaranth (amaranth pops seeds)
  • 3/4 cup milk
  • 2 kiwi
  • A spoon of desiccated coconut
  • Stevia or honey to taste


Method:

Mix milk, amaranth pops seeds with coconut and one kiwi. Heat or eat cold. Mix with honey. Decorate with kiwi, almonds, coconut and chia seeds.

Oatmeal bars, healthy snack to work or school - instead of sandwiches or crisps



Oatmeal bars is like a porridge but dry, without milk. Rich in seeds, dried fruits and nuts, is a good option for a mid morning snack or a healthy snack.

Ingredients for about 16 bars:
  • 500g porridge oats
  • 50g linseed
  • 50g of sesame seeds
  • 100g of honey
  • 50g walnuts
  • 150g dried cranberries
  • 50g coconut oil
  • 3 egg whites
  • one egg
  • cinnamon


Method:
Mix all the ingredients in a large bowl. Prepare the baking tray with baking paper. Transfer mixture to baking tray and press it. Bake in preheat oven - 180 ° C for about 25 minutes. Then cool and cut it into the bars.

Scrambled eggs with avocado, breakfast for the toddler


Dear moms, this post is for you!!! How do you deal with picky eaters? Does the fancy composition of the ingredients have any meaning for the kids? Maybe you have some cool ideas for toddler meals? What do you think about this happy avocado scrambled egg?

Ingredients:

  • slice of bread
  • 2 eggs
  • 50ml of milk
  • Half of avocado

Method:

Mix eggs with milk. You can either steam the eggs or microwave them. Just mix eggs and milk in a bowl and set the microwave for half a minute. Mix and put for another minute. Repeat until the eggs are cook. Put the scrambled egg on a slice of bread. Lay out an avocado to create a funny face.

Peanut butter and raspberry oatmeal, a good source of dietary fiber, magnesium, niacin, and many others.


Peanut butter is a good source of protein, fiber, vitamin E, Vitamin B3 and B5. Additionally, it contains a variety of minerals such as manganese, magnesium, phosphorus, zinc, copper and iron, and zinc. Particularly well suited for vegetarian and vegan diets because as I said earlier is a rich source of protein. This time I prepared peanut butter porridge layered with raspberries. Salty - sweet porridge with sour raspberries is a great start to the day.

Ingredients for 2 servings:

  • cup of rolled oats
  • 2 cups of milk
  • 2 ripe bananas
  • 2 tablespoons of peanut butter
  • 200g of raspberries

Method:

Cook rolled oats and milk on low heat. Add banana and stir until the oatmeal is thick and banana fall apart. Mash raspberries with a fork. In a glass layered porridge then raspberries, porridge and raspberries. Bon Appetit!!!

Low carb and low calorie pancake with yogurt and banana - breakfast for diabetic



Why this pancake is good for diabetics? As we know, people with diabetes must be careful how much sugar they consume. I suggest to use instead normal flour use oat brans. They contain a lot of fiber which will allow for slower distribution of sugar in the blood. Add some cinnamon as well. Studies has shown that cinnamon helps regulate blood sugar levels and reduces the risk of retinopathy, neuropathy and nephropathy.

Ingredients:

  • egg
  • 3 tablespoons of oat bran
  • half teaspoon of cinnamon
  • half a teaspoon of cocoa powder
  • banana
  • greek yogurt
  • teaspoon of oil

Method:
Mix egg with oat brans, cocoa powder and cinnamon. Put teaspoon of oil on frying pan and fry pancake for about 2 minutes on each side. Serve pancake with greek yogurt and banana.

Avocado baked with egg and cheese - low in carbohydrates meal.


Baked avocado is a good idea for lunch or dinner. Low-calorie, low-carb and healthy dish. In addition, avocado, is very beneficial for the vessel walls, lowers cholesterol and dilates blood vessels. It is also a rich source of glutathione, a powerful antioxidant, which has an inhibitory action of carcinogens.

Ingredients:
  • large avocado
  • 2 eggs
  • tsp dijon mustard
  • 20g cheese
  • cress


Method:
Cut avocado in half. Remove the pit and brush inside of avocado with mustard. Put egg in the hole. Eggs may be a little too big to fit in the hole so you can take out a little bit of egg whites and put only egg yolks but it depends on size of avocado. At the end sprinkle with grated cheese. Bake in the oven at 180ÂșC for 20 minutes.
