Sweet cinnamon bread. No eggs, no milk or sugar.



This sweet bread is a perfect vegan dessert. It can also be a great snack for children because it does not contain sugar. Sweetness comes from bananas and raisins.

Ingredients for the dough:

  • 200ml vegetable milk (I used almond)
  • 2 teaspoons dry yeast or 20g fresh
  • big ripe banana
  • tablespoon of linseed (ground)
  • a tablespoon of vegetable margarine or 2 tablespoons of oil
  • 250g wheat flour
  • a teaspoon of cinnamon


Ingredients for the filling:

  • big ripe banana
  • a handful of raisins
  • a teaspoon of cinnamon


Method:

Pour boiling water over the raisins  and let stand for 15 minutes.

Pour a little of boiling water over the ground linseed. Leave it for 10 minutes. Or mix it with cold water and heat it in the microwave. Set aside to cool.

Pour melted margarine (or oil) into milk. Add yeast and mix thoroughly. Mash one banana with a fork. Add to milk along with cinnamon, flour and soaked linseed. Mix. Let stand for 30 minutes to rise.

Filling: Blend soaked raisins. Mash the banana with a fork. Mix with raisins and cinnamon.

Put grease proof paper over the baking tray. You can spread it with extra fat. Roll the dough out (adding a little bit of flour) and spread the filling on top. Roll and then cut it into pieces and transfer to baking paper. Leave it for half an hour to rise and then bake in preheated oven (180C for 20-30 minutes)

Chocolate brownie made from beans. Without main 14 allergens.


If you suffer from food intolerance or food allergies this cake could be suitable for you. Its egg, diary and gluten free. Those ingredients has been replaced by beans, bananas and cocoa powder. The cake is very chocolatey and goes perfectly with forest fruits, e.g. raspberries or blackberries

Ingredients:
  • 2 cups cooked beans
  • 2 bananas
  • 4 tablespoons of honey
  • 4 tablespoons of cocoa
  • half a cup of rapeseed oil
  • 2 teaspoons baking soda


Method:

Put all ingredients in container / pot and blend everting together into a smooth mass. Grease the tray and fit the baking parchment inside. Put the mixture into a small tray and bake 30 minutes at 180ºC. Finally, sprinkle with chocolate dots.

Spiced carrot cake with no sugar. A healthy snack for children or adults


Cake without additional sugar! The sweetness comes from carrots and cranberries. The taste is emphasized by spices such as cinnamon, ginger or nutmeg. The dough have oil which makes it very moist. No butter - perfect for people who can not tolerate lactose or have allergies to cow's milk proteins.

Ingredients:

  • big carrot
  • 3/4 cup cranberries
  • 100g walnuts
  • a glass of wholemeal flour
  • 2 eggs
  • 3/4 cup oil
  • half a teaspoon of bicarbonate soda
  • spice for gingerbread or a teaspoon of cinnamon, a teaspoon of ginger and half a teaspoon of nutmeg

Method:

Pour boiling water over cranberries. Whisk eggs with a mixer together with spices and bicarbonate soda. Slowly add oil while whisking. Finely chop the nuts or use ground nuts. Grate the carrot. Drain the cranberries. Mix all ingredients. Put into a baking tray greased with fat and sprinkled with flour. Put in the oven (180ºC) for half an hour.

Coconut ricotta balls - a healthy, protein snack. Kids love it.


Excellent small cheesecakes with a hint of coconut. Good snack for children as ricotta contains calcium. In addition, kids really like the shape. They can easily grab them with tiny fingers and eat. My  one year old just loves it

Ingredients for about 30 balls:
  • 300g of ricotta cheese
  • Creamy peanut butter (I used almond butter)
  • flat spoon of honey
  • 2 flat spoons of coconut oil
  • 100g desiccated coconut


Method:

Warm up coconut oil so it will melt. I did it in the microwave. Put the ricotta into a large bowl, add honey, coconut oil. Add peanut butter and 1/3 desiccated coconut. Mix it. Then form small balls then rolled in the remaining desiccated coconut. Put in the fridge for at least an hour.

Apricot and millet custard. Great pudding for children and adults


Creamy apricot custard. Good choice for pudding for children or adults. I regret that I did so little. Sweetness of custard depends on the apricot. If they are ripe the dessert will be sweeter

Ingredients for 4 servings:

Millet grain (half a glass)
8 apricots + 2 to decorate
A glass of normal or vegetable milk.
2 tablespoons of honey
spoon of butter

Method:

Cook millet grain in water (ratio of 1 to 2). Let stand to cool. Melt butter in a saucepan and add chopped apricots (I did not peel them). Mix together all ingredients (millet, apricots, honey and milk) to make a smooth custard. Served decorated with apricots and dessicated coconut.

Smoothie à la carrot cake, wholesome and delicious


Smoothie for breakfast or lunch is a good option, but it is worth taking care to include all the nutrients (protein, fats, carbohydrates). So adding milk, yogurt or nuts might be a right thing to do. At first I was a little afraid that smoothie would not be smooth because or nuts and raw carrots. However, it was very easy to mix it and make a delicious creamy smoothie.

Ingredients for 2 servings:
  • 2 medium sized carrots
  • 200 ml of Greek yogurt
  • teaspoon of desiccated coconut
  • 2 walnuts
  • A teaspoon of honey
  • Cinnamon, ginger, nutmeg, turmeric


Method:
Grate the carrots. Chopped nuts and mix all ingredients.

Healthy, low fat peanut butter cheesecake with chocolate base.



Why healthy? Instead of buttery biscuit base I used pearl barley cooked with turmeric. This helped to increased the amount of fibre and mineral content.Then cocoa powder which is wealth of magnesium, chromium, iron, and zinc. The fat in the cake is only from peanut butter and mascarpone cheese (instead of butter or oil)!!!

Ingredients for the chocolate base:

  • cup of pearl barley
  • teaspoon of turmeric
  • 4 tablespoons of stevia
  • half a cup of cocoa powder
  • 3 eggs
  • 200ml natural yoghurt

Ingredients for the cheesecake:
  • 400g of mascarpone cheese
  • 2 eggs
  • 2 tablespoons stevia
  • 2 heaped tablespoons of peanut butter
  • 200ml natural yoghurt
Dark chocolate and peanut butter to decorate cake

Method:
Cook pearl barley in 2 cups of water with turmeric. Set aside to cool. Add the eggs, yogurt and stevia. Blend until smooth. Mix with cocoa powder. Grease baking tray with oil or butter, put baking paper and then the chocolate dough.

Mix mascarpone cheese with the eggs, stevia, peanut butter and yoghurt. put it on the top of chocolate base.

Put in the preheated oven (180 ° C) and bake for 40 minutes. At the end put some peanut butter on the top and sprinkle with grated dark chocolate.

Low fat chocolate ginger cookies.


Instead of the usual fat (margarine, butter, oil) I used avocado, this is a good solution for people who want to use less fat in their diets. Additionally, cookies contain a lot of fiber and cinnamon which will result in aligned level of sugar in blood.

Ingredients:

  • avocado
  • tablespoon of cocoa powder
  • 2 eggs
  • 2 cm ginger
  • teaspoon cinnamon
  • teaspoon baking powder
  • 2 tablespoons stevia
  • half a cup of whole-wheat flour
  • half a cup of oatmeal

Method:

Mash avocado using fork. Peel and grate ginger. Mix all ingredients in a large bowl: avocado, cocoa, eggs, ginger, baking powder, stevia, flour and oatmeal. Put the cookie dough portions on baking tray lined with baking paper. Bake 10-15 minutes at 180 ° C.

Healthy, tasty and nutritious gingerbreads

This gingerbreads are healthier alternative to the traditional gingerbreads. They contain large amounts of fiber, because instead of the usual flour I used half and half whole-wheat flour and wheat bran. This is very helpfull if you want to stay full for longer and help to avoid snacking.


Ingredients for 40 gingerbreads:


  • 2 cups whole grain flour
  • 2 cups wheat bran
  • 150ml honey
  • 50g gingerbread spice (turmeric, nutmeg, ginger, cinnamon)
  • 2 spoons of baking powder
  • 2 eggs
  • 2 tablespoons of stevia
  • 150ml of milk
  • 2 tbsp of rapeseed oil
  • dark and white chocolate to decorate gingerbreads

Method:

Heat the milk and honey. In a large bowl, mix all the ingredients. Knead the dough should be quite hard. Roll out the dough. Cut the ginger using your favourite cookie cutters. Bake at 180 ° C for about 10 minutes. Set aside to cool. I decorated my gingerbreads with dark and white chocolate.

Energy bites, healthy snack

Peanut butter is very high in calories but please don't avoid it in your weight loss diet!!! This is because peanut butter contain large amounts of protein and you feel quite full after. This will help you avoid snacking unhealthy things like chocolate bars, crisps and other snacks. This energy bites are very simple to prepare and very very tasty!!!


Ingredients (about 25 balls)

  • 4 heaping tablespoons of peanut butter
  • half a cup desiccated coconut
  • half a cup of linseed
  • cup of porridge oats
  • 4 tablespoons chocolate chips or chopped dark chocolate
  • 4 tablespoons honey

Method:

Mix in a large bowl all the ingredients: peanut butter, honey, coconut, porridge oats, flaxseed and chocolate. Shape into small balls. Use cold water to soak your hands - it will be much easier to form balls. Put in the fridge for about an hour.

Coconut and pineapple cake. Low in carbohydrates, gluten-free with butter icing made from beans.



Coconut Cake - Pineapple is a veritable madness. Without regrets, we can eat piece of that healthy cake. No sugar, no flour and cream is made on the basis of beans. Especially recommended for people who avoid sugar. Easy to prepare, you just need  to wait until the sponge will cool down. The best thing to do is to bake sponge at the first day and prepare butter icing and decorate on the second day.


Ingredients for sponge cake (small tray)

  • 150 g of coconut oil
  • 3 eggs
  • 150g of stevia
  • 100g of desiccated coconut
  • 50g of walnuts


Ingredients for the cream:

  • 250g of cannellini beans
  • 4 tablespoons of stevia
  • 80g of desiccated coconut


In addition: half of fresh pineapple and coconut balls

Method:


Whisk the egg whites with stevia until they are fluffy. Walnuts and coconut blend with mixer or grinder. With an electric mixer, mix the egg yolks and coconut oil. Then, using a large spatula, stir together with egg whites. Pour into to a small greased baking tray. Bake about 40 minutes at 180 ° C. Then allow to cool, then cut in half.

Drain beans and blend it with a sweetener and coconut.

Peel the pineapple and cut into very thin slices so they are easy to fold. Spread the sponge cake with cream and a few slices of pineapple and then spread the cream on the entire surface of the cake. On top place the pineapple slices, sprinkle with grated coconut. You can also put some coconut fat bombs on the top.

Fat free, gluten free chocolate cake.



At the beginning I thought it is only fat free but later I realized that it is also gluten-free. Very moist chocolate sponge cake, with cranberry jam. So the combination of sweet and sour. Very comforting for cold autumn days :-)

Ingredients for small tray:

  • 400g of red beans
  • 5 heaped tablespoons coco powder
  • half a cup of sugar
  • 3 eggs
  • teaspoon of cinnamon
  • half teaspoon of nutmeg
  • teaspoon of baking powder
  • 50ml of milk
  • 200g of cranberry jam
  • a handful of dried cranberries

Method:

Whisk egg whites with sugar and make them nice and fluffy. Drain red beans and blend them. Add milk, egg yolks, cinnamon, nutmeg and blend again. Mix egg whites and the rest of ingredients using a spatula. Pour into a greased cake tray. Bake at 180°C for 40 minutes. Wait untill the cake cool down and cut the top and crumble it. Spread the top with cranberry jam. On top put crumbled cake and dried cranberries. I also put some crashed meringue on the top.

Low calorie, low fat orange and coconut cake - perfect for hot days.



Cake without the fat? Without butter, oil? Yes!!! Instead, these components I used cannellini beans. So instead of fat we gain an extra portion of protein and fiber. Without sacrificing the taste! Don't worry you won't feel the taste of beans! In addition, the combination of oranges and coconut gives lightness and a little bit of sour taste. Perfect for hot summer days.

Ingredients for the sponge:


  • can of cannellini beans (200g)
  • 3 eggs
  • half a cup of sugar
  • cup whole-wheat flour
  • teaspoon baking powder
  • half a cup of milk


Ingredients for the orange jelly


  • 500ml freshly squeezed orange juice
  • 1.5 tablespoons gelatin
  • tablespoon honey


Ingredients for coconut jelly


  • 500ml light coconut milk 
  • 1.5 tablespoons gelatin
  • tablespoon honey
  • tbsp desiccated coconut


In addition, a large orange.

Method:


Sponge: whisk the eggs with the sugar until will get very fluffy. Drain the cannellini beans with water and blend with milk, flour and baking powder. Gently whisk it with eggs. Greased baking tray with butter and sprinkled with flour then pour the dough. Bake in oven preheated to 180 ° C - about half an hour.

Orange jelly: Dissolve gelatin in 2 tablespoons of cold water. Let stand for a minute to swollen. Heat 1/3 orange juice and mix it with honey and then with the swollen gelatin. Then mix the rest of orange juice. Put in the fridge to jelly slightly set. Do not put it directly on the cake, because the sponge absorbs everything. Jelly must have the consistency of thick custard.

Coconut jelly: Dissolve gelatin in 2 tablespoons of cold water. Let stand for a minute to swollen. Heat 1/3 of the coconut milk and mix it with honey and then with the swollen gelatin. Then mix with the rest of coconut milk and coconut.

When the dough has cooled and  orange jelly solidified gently pour it on top of the cake. Place orange segments on top and then cover with coconut jelly. Put in the fridge to set (about 2 hours)

Green moss - healthy spinach cake with dried cranberries.



Green moss is a cake characterized by extremely distinctive green colour and it actually look like moss in forest. On the top you can put some dry cranberries or pomegranate. I decided to use dried cranberries as they more look like forest. It is a little bit healthier version of regular cake by ingredients like spinach, dried cranberries and whole wheat flour. However, you need to remember it also contains a large amount of sugar and fat. However, I hope that it will be for you an alternative to the usual cakes with cream.

Ingredients:


  • 500g baby spinach
  • 4 eggs
  • half cup of sweetner (erytrol) 
  • 3/4 cup of oil
  • tablespoon vanilla extract
  • 2 cups whole-wheat flour
  • 2 spoons of baking powder
  • 500ml full fat greek yogurt 
  • 50 dried cranberries

Method:

In a large bowl, mix eggs with erytrol until they are light and fluffy. In a separate bowl, blend the spinach with oil and vanilla extract. Add spinach in portions because it will shrink after blending. Then mix the spinach with beaten eggs and flour and baking powder. Transfer to a baking tray greased with butter and cover with flour. Bake for about 40 minutes at a temperature of 180 ° C.

Remove cake from oven and let cool down. With spoon gently remove the top layer of the cake, put into a bowl and shred it with your fingers. Mix yogurt with a spoon of erytrol. Put it on the top of the cake and sprinkle with cake crumble and dried cranberries. Store in the refrigerator.

Low in carbohydrates cheesecake - high protein dessert



Being on weight loss/sports diet means that you can't eat sweets. It is not surprising because these products contain large amounts of sugar and fat. While we eat sweets we feel a great pleasure, but afterwards we will be so angry on ourselves that we did that... However, we can make some cakes if we choose ingredients wisely. The following recipe for cheesecake is a high-protein, low in carbohydrates and y also gluten-free. Very moist and tasty.

Ingredients:


  • 600g light soft cheese
  • 6 eggs
  • lemon
  • 200g of Brazil nuts
  • 50g butter
  • 3 tablespoons peanut butter
  • 3 teaspoons of sweetener


Method

Blend brazilian nuts and mix with the melted butter. Grease round baking tray with butter and put nuts on the bottom of the tray. smooth it with spoon. Put in the fridge for about half an hour.
Mix light soft cheese with eggs, lemon juice and sweetener. Pour into a baking tray and bake at 160 ° C for 40 minutes.
When the cheesecake has cooled, brush it with peanut butter.

Sweet wholegrain snack - a replacement for sweet chocolate bars



For some of us is very hard give up sweets. However, we can prepare something sweet that will not be as unhealthy and calorie: for example, quick snack made with whole grain tortilla. Much better than sweet chocolate bars. For example, bananas have a soothing effect on the stomach and protects the stomach wall from the harmful effects of acid and prevent the formation of ulcers. They also have antibacterial activity. Furthermore they contain prebiotics which effectively provoke a digestive tract action.

Ingredients:


  • whole wheat tortilla (recipe here)
  • banana
  • teaspoon of peanut butter
  • teaspoon of Nutella

Method:

Tortilla, spread with peanut butter and nutella. Place the tortillas on the edge of a banana, tightly wrap the tortilla. Cut into slices.
